Tapioca Fluff

Nothing tastes better on these cold winter evenings than creamy tapioca pudding. My kids always loved this. Once again, it is a MICROWAVE dish...
1 egg, separated
3 T. sugar
1/8 t. salt
2 c. milk
3 T. minute tapioca
2 T. sugar
3/4 t. vanilla

Combine egg yolk, 3 T. sugar, salt, milk and tapioca in 1 1/2 qt. casserole. Let stand 3 minutes to soften tapioca.

Beat egg white until foamy in 2 qt. bowl. Gradually beat in sugar. Continue beating until egg white holds soft peaks. Set aside.

Place tapioca mixture in oven. MICROWAVE 8 to 10 minutes on "8" or until mixture has thickened, stirring twice.

Fold tapioca mixture into meringue carefully but thoroughly. Stir in vanilla. Cool slightly and chill.
