So.. in the spirit of MLK day, I've been in a second chance mood. Then I was thinking what to get dinner going. I remember an italian show on the food network with a recipe for onions and potatoes. So yesterday when I went shopping I saw the small potatoes, and I was thinking, "Hey.. I should make that with some pot roast."
It's a perfect leftover or pre-prep meal to save you time. Yep.. I know exactly why I remembered the recipe, because she said, "It's even better the second time around."
Potatoes and Onions

2 pounds new potatoes (white, red, or Yukon gold), scrubbed and halved
1 pound cippolini onions, peeled
1/4 cup extra-virgin olive oil
2 teaspoons dried rosemary
1 teaspoon salt
1 teaspoon freshly ground black pepper
Preheat the oven to 400 degrees F.
In a large bowl, toss together all of the ingredients. Spread the mixture in a single layer on a baking sheet. Bake until the potatoes and onions are golden brown and cooked through, about 40 minutes. Serve immediately or cool and store in an air-tight container in the refrigerator, reheating the next day in a preheated 400 degrees F oven for 10 to 15 minutes.
You know I'm all about short-cuts. Working hard and smart right. So I'll have the left over side dish put up for tomorrow for lunch with some sandwichs or something. The kids loved it anyway, so I know it's not a problem, poppin them back in the oven. yummy.
Another thing I saw yesterday was "the pursuit of happiness" that's been a big talk of the town lately. Esp with the type of work I'm in with success coaching, training, etc.
After the movie, he couldn't stop talking about that wave of something that came over him when he finally let it go and moved on with his life. Things started to change and everything he wanted was just coming to him. It reminds me of that Oprah speech when she was running and finally let go of being on Color Purple and things changed for her and she got the part.
So.. the thing is, there are no second chances, there is unlimited supply of changes to turn your life around for the better. It's really up to you and your faith. And of course, it made me happy to know that I'm starting to surround myself with positive happy people, because that's what I'm attracting to me, when I changed my life around. It's just funny how easy it is to understand, but how hard it is to do. I mean, people could go insane trying to look for happiness, you know?
